Quick and easy Mini quiches made in a Pie machine or oven

Ingredients

  • 3 eggs
  • 4 rashers of bacon, diced
  • 1tsp of butter 
  • 1 small onion or 1/2 large - diced (You can use red onion for extra colour instead of a brown onion)
  • 2 tablespoons of tasty cheese, grated
  • 1 red and 1 green small cupsicums diced 
  • 100g of chopped mushrooms 
  • salt and pepper, to taste
  • A pinch of peprica  
  • 200g of thickened cream
  • sprinkle of fresh or dried parsley, optional
  • 3-4 pre-made frozen short crust pastry squares
  • Pie maker 

Directions
Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Pre-heat your pie machine until green ligh come on. 
  2. Lightly grease patty trays  on pie machine with cooking spray or butter.
  3. In a bowl, mix the eggs, cream cheese add salt and pepper and some peprica  until all combined and mixed all together to become an nice runny, mixture and set aside. 
  4. In a frypan add some butter to heat up then add the bacon, onion, chopped  mushrooms  cupsicums and sauté until all have a nice colour. Add salt and pepper and stir with a fork until all mixed together well.
  5. Using an egg ring, or a pie cutter cut circles out of the defrosted short crust  pastry and place into the greased patty cake trays in the pie machine making sure not to burn your fingers as pie plate will be hot. 
  6. Spoon the mixture into the pastry. 
  7. With a ladle or spoon Pore the egg mixture over the sauté vegetables and bacon and springless with the grated chadder cheese and parsley 
  8. Close pie machine and let it cook until green night comes on. Check and if it need a bit more close cover and cook to your liking or until it's reached a golden brown colour.
