Lambropites (Easter pies with cream cheese )

Ingredients 

Dough

100 g. margarine or butter 
3 kg. P. Sugar 
1/4 kilo flour 
Zest of half a lemon. 
Egg 1-2 eggs 

Stuffing 
1/4 kilo of good, fresh ricotta 
3-4 n. P. Thyme honey 
2 n. P. Flour 
A pinch of saffron 
Zest of 2 lemons, or a lemon and an orange 
1-2 krokadia egg 
Castor sugar 

Method

Mix the butter with the sugar and flour and add the zest of lemon and egg white as necessary to make a soft dough. The cover and leave.Prepare the filling, carefully melting the cream cheese with a fork. Add all other ingredients and the mixture is working until smooth. If we use saffron, heat for a while klostitses saffron over low heat in a small frying pan (without oil or butter) until they become dust just push them. Add the saffron in the filling. 

Preheat oven to 200 degrees. Flour the work surface and roll film with half the dough. Cut discs in size cup of tea and put a ball stuffed into small walnut size, the center of each disk. We push a little over spread, leaving about one hundredth dough around. Wet our fingers and turning inwardly the dough, to form a wreath or a triangle a double dough around the filling. Transfer to a greased baking sheet and continue with the remaining dough and filling. 

Bake for 20 minutes and remove the patties just begin to brown. If desired, sprinkle with powdered sugar.
