Hortopita

I Made a hortopita with cheese for my family with puff pastry and it was amazing!

Ingredients
1/2 cup Olive oil
500gr of clean spinach leaves
500gr of clean from steam the kale   (or any other greens of your choice)
1 large bunch of spring onions sliced
2 eggs +1 for the top
1 leek sliced
1 red onion sliced
I bunch of parsley
1/2 bunch of dill
250gr Haloumi Cheese diced
250gr of feta cheese
Salt and pepper
2 Tbs of Trahana (fine cracked wheat and semolina normally used for soups  to thicken and take the moisture out so the pie stays nice and crisp)
4 large pieces of puff pastry
Sesame for topping

Method

Wash all vegetables and greens under running water and soak in some fresh water with 1/4 cup of vinegar then with a veggie spinner dry all green veggies! Place in a large frypan the olive oil let it get hot then add the onion the spring onions and the leeks until the get soft add the kale and add the spinach parsley dill the 2 eggs beaten and the cheeses mix well and add 2 tablespoons of trahana mix well and let it cool!
Place some baking paper on a shallow tray and place the 2 puff pasties on to the baking paper making sure to join well
Then place the other 2 jointed puff pastry on top seal the edges with your fingers apply the egg wash on top and some sesame seeds and mark with a knife! ( it’s easier to slice after it’s cooked) bake on the middle rack in the oven on 220* until it becomes nice color! Let it cool and enjoy!
