Semolina syrup cake (Recipe by Alex Kandalis)

Ingriedients 
1 cup plain flour
1 cup fine semolina
1 cup sugar 
1 tablespoon baking powder 
1 teaspoon vanilla essence
125gm unsalted melted slightly cooled butter 
6 eggs separated
Rind of orange or lemon (I prefer orange)

SYRUP
2 & 1/2 cups sugar
4 cups water 
2 star anise and slice of lemon rind.

Start the syrup first and reduce to half 

Cake 

1.Sift flour,semolina and baking powder in one bowl 
2.beat egg yolk and sugar then add butter a little at a time till all beaten then add vanilla essence and grated orange rind
3. In a separate bowl beat egg whites till stiff
4. Gently fold a little of the egg white and the sifted ingredients into the egg yolk bowl until all combined then put into a greased 30 cm cake tin and bake in oven 180 degrees till golden and it comes away from the edge.
while hot score your cake with a sharp knife and gradually spoon the cooled syrup onto the cake..... I leave it sit till cake is cooled before serving enjoy😊
