Okra with chicken and potatoes in tomato wine and feta cheese
Ingredients for (5 servings)
5 chicken legs
1 kilogram of fresh or frozen okra
1/2 kilos of cut potatoes
125 g oil
3 tomatoes large ripe
1 Tbs of tomato paste
2 onions in slices
3 Garlic finely chopped
1/2 bunch of parsley
1 small coffee cup of balsamic vinegar
Salt Pepper,
1 glass of white wine
Slice of crumbed feta cheese
a bit of chicken stock
Method
. In a bowl, add some oil, salt and pepper the balsamic vinegar and add the chicken peaces and mix well and let it marinate in the refrigerator for about half hour while you prepare the rest of the ingredients then put in a saucepan (I like to use my slow cooker that slowly cooks while I am off to work) a bit of oil and brown the chicken well and take them out and do the same with the potatoes and the okra then add the sliced onions and chopped garlic with the okra and sauté on low heat to get color. When done add the wine and let the alcohol evaporate for with the pot uncovered.
Chop the tomatoes in the moulti or the grater, chop the parsley and leave aside. Once alcohol evaporates add the tomato paste and let it sauté to let the flavor out then pour the tomato purée and let it boil for 10'. Once the liquids have settled add the chicken potatoes and okra, salt, pepper and continue to boil for about 30-40 minutes by shaking the pot. Add 1/2 glass of chicken broth or more if needed
Finally, add the parsley at the end with the crumblings of feta cheese. In this recipe, we do not leave the food with its oil as we say. It will not separate the liquid from the oil, it will be light and will have a great gravy and taste. I tried it and it’s worth the effort!
