Waffle mixture recipe

This basic recipe will make about 8 waffles

Ingredients 

3 whole eggs
375 ml of milk
250g of SR. Flour
2tsp (10m) of baking powder
6 tsp 30ml of sugar
1 tsp of vanilla sugar 
1/2tsp 2.5 ml salt
8 tbsp  (120mls) of oil

Method
Separate egg yolks and whites. Mix the egg yolks with the milk and oilin a seperate bowl. Add the flour, baking powder vanilla sugar, salt and mix well to make a soft batter.

Beat the egg whites until they are fluffy and fold in to the batter

Spray some oil spray on to the waffle maker and with a large spoon place enough batter to cover the plate close and cook until golden brown serve with icecream strawberries or banana and Natella the Choise is yours! Enjoy!

Fish baked in tomato sauce (Psari plaki )

Ingredients
1.5kg whole snapper, scaled, gutted
Juice of 1 lemon
Sea-salt flakes and freshly ground black pepper, to season
½ cup olive oil
1 brown onion, chopped
2 cloves garlic, crushed
1 stalk celery (with leaves), chopped
1 carrot, thinly sliced
400g can chopped tomatoes
2 Tbsp chopped flat-leaf parsley leaves
1 leek chopped 
¼ cup water
½ cup white wine
½ tsp caster sugar
Extra chopped flat-leaf parsley leaves, to serve 
optional  cut potatoes 
Bread crumbs for the top
1lemon cut in slices  

Method

1. Put fish on a large plate and squeeze over lemon juice. Season, then cover with plastic wrap and set aside.
2. Preheat oven to 180°C. Heat oil in a large frying pan over a medium heat. Add onion, garlic, celery and carrot, and cook until onion is soft and translucent. Add tomato, parsley, potatoes  water, wine and sugar. Season. Cover and simmer for 10 minutes.
3. Spoon ¹⁄³ of the sauce into base of a large baking dish and top with fish. Top with remaining sauce. Place some slices of lemon and sprinkle some bread crumbs. Cover with foil and bake for 30 minutes. Remove foil. Spoon sauce in pan over fish again. Cook, uncovered, for a further 10 minutes.
4. Transfer baked fish to a serving platter. Top with lemon and extra parsley. Serve with a Greek salad and crusty bread, if you like.
5 Some times if I have fillets of fish I make individual serves. I get some baking paper and  place it on to Ail foil then I  place some sauce on the paper and some of the veggies and then the fish then repeat with the sauce and veggies and place a lemon slices on top! I then seal the parcels and and bake in the 180' oven for 30 min and then I uncover parcels and cook for further 10min. I serve hot. 


Jalapeno Lime Salmon

Jalapeno Lime Salmon (only 2.9 carbs per serving!! Serves 4

A great oven baked salmon dish that is full of flavor 

Ingredients:
1 pound of Salmon filet (skin removed)
1 tbsp. olive oil
1 lime, zest & juice
2 garlic cloves, minced
1 Jalapeño, grated
1/2 tsp. salt
1 tsp. pepper


Instructions:
Preheat oven to 400 degrees F. Line a rimmed baking sheet with parchment paper and lay salmon filet on it. Pat salmon dry, on both sides, with a paper towel. In a small bowl whisk together olive oil, lime zest, lime juice, garlic and jalapeño (as much as you can handle). Sprinkle salt and pepper over salmon on both sides. Pour oil mixture over top of the filet. Bake for 10-14 minutes, or until fish is just cooked through. Squeeze additional lime juice over the filet, if desired. ENJOY!

Fasting food: Green Beens with potatoes in tomato sauce ( Fasolakia mepatates yianni)


Ingredients:

1 kilo of baby string beans (frozen may be used)
5 - 6 ripe tomatoes skinned and diced, or diced tinned tomatoes
2 onions
3 cloves of garlic 
½ bunch parsley
1 cup olive oil
½ teaspoon salt freshly coarse black pepper 

Method:
1. Slice onions garlic finely, sauté in hot oil till translucent add some of the chopped fresh parsley the tomato paste and stir to get the flavour through add the crushed tomatoes and stir well adding enough water to make sauce add the vegetable stock salt and pepper and allow to cook stirring. In another pot add some olive oil and sauté potatoes until they are all covered with the oil and add the Fresh green Beens mixing well. 
2.in a slow cooker  add the beans, potatoes in with the tomatoes, sauce and the other half the parsley and cook on high for 2-3 hours about or till beans are tender.
3. Serve sprinkled with remaining parsley. Alternatively you can serve it sprinkled with crumbled fetta or just plain with fresh crusty bread. Often the bread is used to mop up the sauce.

Wonton Dumplings and Taiwanese Samosas

II 500g of pork meat
4 large leaves of Chinese Cabage chopped 
1 small root of fresh ginger grated 
3 cloves of garlic thinly chopped 
2 large carrots grated
1 small pkt of thin rice noodles 
1 pkt of Gow Gee pastry
1 Wonton wrappers
4 Tbls of soy sauce
4 tbls of oyster sauce
1 tbls of fresh coriander leaves chopped 

Corn flour in water to seal wonton and Samosas 

Method 

Place the rice noodles in a bowl with some tap water to soak. 
Place all vegetables in a blender and chop until all are in fine pieces place in a bawl with the chopped prawns, and also chop the noodles into small pieces and add to the rest of the ingredients as well as the soy sauce and oyster sauce and mix all together well. 

Take the samosa  pastry out of its packet and rub each one with flour to make it easer to fork. Place a small amount of the filling and fold in sides to cover filling and fold in to small pleated parcels and for the Wontons place mixture in the middle of the wonton pastry and twist to make the dumplings. 
You can cook in a steamer or fry in a fry pan.  
 Serve with either soy sauce or sweet chilli sauce as entree! 


















Kohlrabi Salad recipe Hakka style!


Ingredients 

1 large kohlrabi thinly sliced
3 tbls of rice wine vinegar
1tspoon of sesame oil
1 fresh chilli
1 tsp of sugar optional 
1 tbls of fresh chopped Corrienda 
4 gloves of Garlic

Method
Peel kohlrabi and slice very thinly and place in a bowl with some salt and let it sit in the Freddie for 11/2
Hours to marinade. Then take out of the dreaded and drain any liquid out but do not rinse kohlrabi.
I a small seperate bowl add the wine rice vinegar chopped chilli, crushed garlic, sugar ,Corrienda and sesame oil. Mix well and poor over Ksliced kohlrabi cover and place in the refrigerator over night. 

serve as a salad with any meat dish! Enjoy!

Oven Baked Fajita
Ingredients:
1 pound boneless, skinless chicken breasts, cut into strips
2 Tbsps. vegetable oil
2 tsps. chili powder
1 1/2 tsp. cumin
1/2 tsp. garlic powder
1/2 tsp. dried oregano
1/4 tsp. seasoned salt
1 (15 ounces) can diced tomatoes with green chilies (Rotel)
1/2 red bell pepper, cut into strips
1/2 green bell pepper, cut into strips
1 medium onion, sliced


Directions:
Preheat the oven to 400 degrees F. Place chicken strips in a greased 13×9 baking dish. In a small bowl combine the oil, chili powder, cumin, garlic powder, dried oregano, and salt. Drizzle the spice mixture over the chicken and stir to coat. Next add the tomatoes, peppers, and onions to the dish and stir to combine. Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Enjoy.

Crock Pot Corned Beef Dinner

Ingredients:
2 -2 1/2 lbs corned beef brisket
1 medium onion, sliced
1 stalk celery, cut in 3...
4 medium potatoes, peeled and halved
4 medium carrots, peeled cut in 3
1 cup beef bouillon
1 bay leaf
1 garlic clove, smashed
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
4 small cabbage, cut into wedges
1 teaspoon caraway seed

Directions:
Trim brisket of all visible fat, cut to fit 4 qt or larger crockpot, if necessary.
Place onion, celery, potatoes and carrots in bottom of crockpot, lay brisket on top. Whisk together bouillon, bay leaf, garlic, Worcestershire sauce and dry mustard. Pour over brisket, cover pot. Cook on low setting for 8 to 10 hours, adding cabbage wedges and caraway seed for the last hour of cooking.

Vietnamese cold spring rolls

KIngredients 

1 large cucumber cut in to thin strips
1 large carrot cut in to thin strips 
1 bunch of fresh mint leaves
500g of crab sticks or cooked prawns
1 Avocado sliced
3 eggs made in to an omelet and thinly sliced
1 pkt of fresh bean Spout   
1 pkt of rice paper
Sweet chilly sauce or soy sauce  

Method

Wash veggies very well under running water and slice the cucumber and carrot in to thin strips and place in a tray

Cut the Avocado in to slices and rub with some lemon juice to stop it from browning
Separate the leaves from the fresh mint and place with the other veggies in the tray

Brake the eggs in to a dip plate and whisk with a bit of water salt and pepper and place in a fry pan with a drizzle of oil to make an omelette. When ready take out and slice in to strips. 

Have a bowl of water to soak the rice paper 

Make sure not to over soften rice paper because it will be hard to roll. 

To assemble place the soften rice paper on on a clean surface place two pieces of each of the crab stick,avocado,carrot,bean spout, mint leaves, the omelette and the cucumber and roll each one and place in a wet chucks towel so that they do not dry out until you are ready to serve! 

Serve hot  with sweet chilli or oyster sauce enjoy!
