Patatokroketa ( potato n feta balls)



What we need:

4 medium potatoes

1 bunch fresh mint

200g of feta crumbed 

flour

Salt and black coarse pepper ( make sure to taste as Feta can be too salty)

corn oil or sunflower oil for frying


Method: 

Peel the potatoes, wash them well and grate (coarse sanding).

Then put them in a colander to drain of all their water completely.

Finely chop the mint-washed and mix with the potatoes and feta and pepper. In a pan add oil for frying up the middle of a deep frypan

While waiting for the oil to heat  take a handful of the filling, and moulding it into a small ball and sprinkle with a little flour and place on a plate until all the croquettes are done. 

After sprinkling the patatokroketa, with flour and making sure it's all round and well floured.

We continue to make all the potato croquettes and fry slightly lowering the heat until golden brow!
