Fay's Greek Cod (Bakaliaros) With Garlic Sauce (Skordalia



This fish dish is normally accompanied by garlic sauce 
Ingredients

1 kg fresh cod
4 tablespoons flour
300 ml sunflower oil
Salt to taste

For the Bear batter 

1 cup of all purpose floor
1 can of beer or as much as needed to make a soft batter
A bit of salt. 

Preparation

Cut the cod into slices approx. 3cm wide.

Remove the central bone, fold open the remaining flesh and cut it in half.

Salt each of the pieces (if it is fresh cod only)and sprinkle flour on them

Then deep them in the batter 

Deep fry in hot oil for 4 minutes approx or until golden brown place then on a tray with kitchen paper to drain excess oil! 

Serve with skordalia and beetroot hot salad

Beet root hot salad

Clean wash  and cut a bunch of fresh beet root and steams 
Boil until beetroot has soften drain, place beetroot and steams in a deep bowl add olive salt pepper and 2 cloves of garlic slice over it and a juice of one lemon or some red while vinegar.  


If you are using the salted cod you will need to soak in a bowl of water and keep changing the water a few times it's best to do this a day before so all the salt can come out of the fish! Enjoy!
