A popular, moist meatloaf that is baked in its own barbeque flavoured sauce. Great with mashed potatoes and vegetables, with the sauce drizzled over them.
Ingredients
500 g sausage meat
500 g mince
1 cup fresh breadcrumbs
1 onion, chopped
2 teaspoons curry powder
1 egg
½ cup milk
½ cup water
Sauce
½ cup water
¼ cup brown sugar
½ cup tomato sauce
¼ cup worcestershire sauce
2 tablespoons vinegar
1 teaspoon coffee
2 tablespoons lemon juice
2 tablespoons butter or margarine
Method
Combine the minces, breadcrumbs, onion, curry and lightly beaten egg in a bowl. Add salt and pepper if desired.
Beat together until well combined.
Gradually add mixed milk and water, and continue beating until fairly smooth.
Place in greased baking dish.
Bake at 180°C, covered, for about 30 minutes.
Remove from oven, pour off surplus fat, pour sauce over and return to finish cooking for another 30-45 minutes. Baste sometimes with the sauce.
Sauce: Combine all the ingredients in a saucepan, bring to the boil and simmer gently for 5 minutes.
Recipe notes
The meatloaf ingredients are optional, sometimes I use a lot more mince than sausage meat. I find I never need as much milk and water. I mix it fairly roughly with clean hands, as its easier, until it is just combined nicely, and it is fine - doesn't have to be as smooth as recipe states. This recipe can also be rolled into balls, and baked in a dish in the oven for 30 minutes. Pour sauce over and cook another 20 minutes. Serve with rice instead of the vegetables.
