Veal and eggplant parmigiana



Ingredients 

1 large eggplant slice in to 5mm wide slices
1/2 cup olive oil 
4 150g veal steaks
1 jar of parmigiana ready made 
sauce
2 cups of pizza plus cheese or mozzarella shredded 
Salt and pepper

Method
Preheat oven  to medium

Salt and pepper eggplants and meat
Heat some olive oil  a frypan and fry  eggplants until soft and browned take out and place on a baking tray with kitchen paper 
Add the veal and fry on both sides until lightly browned

In a baking tray Place veal and then the eggplant and some of the tomato  parmigiana sauce top with the cheese and chopped parsley cook in hot oven until cheese is golden 
Serve with a garden salad!
